Blueberries -- Georgia's Crop
In recent years, Georgia out produced all other States, even Michigan, in Blueberries. Most of the State's production is in the south, growing mostly Southern Highbush and some Rabbiteye varieties.
The Georgia Blueberries website has many pages worth of Blueberry recipes, mostly sweets, but a few savories, as well.
Let's begin the spring with something simple:
Georgia Blueberry Lemonade
Ingredients:
Directions:1. Place blueberries in a large pitcher, and sprinkle with 1/3 cup sugar.
2. Bring remaining 1 cup sugar and 1 cup water to a boil in a small saucepan. Split vanilla bean, scrape seeds into pan, and add bean. Bring to a boil, and boil, stirring occasionally, 3 to 5 minutes or until sugar is dissolved. Remove from heat, cover, and steep 20 minutes.
3. Remove and discard vanilla bean from syrup, and pour syrup over blueberries in pitcher. Add lemon juice and 1 1/2 qt. water. Stir well, being carefully not to crush berries. Cover and chill 1 hour before serving. Stir in mint just before serving.

- 1/2 cup loosely packed fresh mint leaves
